Vineyard is in Guyot or spurred cordon with green row manure cultivation, fertilization is organic. Harvest is manual and at the moment of maximum grapes ripeness. No pressing is performed. Must fermentations are carried out with an oenological protocol from the Agricultural University of Milan. Aging is 6 months in steel vats and 6 or 12 months in chestnut or French oak barrels. The "coupe de vin" are chosen annually by a certified sommelier. Bottling is at the origin. Sulphite content <100 mg/l prevents refermentation and oxidation during bottle refinement. Clarification and filtration are not carried out. No chemicals are added outside of the sulphites .
